We did it again. We brewed the “Taco Beer.” We took this 5 gallon batch to the Bluebonnet Brew-off in Fort Worth, Texas, and it caught a lot of attention. This is definitely a beer that you don’t want a lot of, but it’s unique flavor can’t be denied. …Everything is fine. Sweet meet heat in this pineapple infused dragon pepper beer. That’s right, herbs and spices. Generally speaking, a jalapeno pepper is 2500-5000 Scoville units, where as, the Thai dragon pepper is 50,000 to 100,000 Scoville units. We grew this batch of dragon peppers in our backyard. Dried them in a dehumidifier, and then ground them into a spice. Unfortunately, the heat dominates EVERYTHING we’ve put it in to date. Well, we had been brewing for a while without any issues… and this brew day went perfectly. BUT, on day FOUR of fermentation, we had a blow-out in the ferm chamber in one of the fermenters, and this beer made a mess. On top of that, we don’t know how long it was exposed, and one fermenter of the set was oxidized. Then when it finished it’s run, it had a bad aroma, and we ALMOST threw it out. We officially joined a homebrew club this month. For years now, we’ve shared beers on Mondays with many members of the Bay Area Mashtronauts at the Bakfish monthly homebrew meeting. Unfortunately, Bakfish closed its doors this month. It is sad news for us as we loved Bakfish. The Bay Area Mashtronauts are hosting a pale ale hop comparison meeting in February, so we brewed this beer with Southern Cross (New Zealand) and Vista (American) hops.
