This was a fun one to brew. It recently took third place in the Hoppy Halloween Challenge in North Dakota. The color of the brew is beautiful. October is coming… time for a Märzen! We are brewing this beer to enter into the Robert Cove Germanfest in the Bayou State, and to our local home brew supply competition at Sitta’s Brew Hub. Temps hit 100 degrees with a heat advisory in affect, so we worked our ass off on this beer. Note: We know this doesn’t fit in with the Meme’s Theme this year, but we wanted to switch it up for this October brew. We also wanted to enter the label into the Brew Your Own magazine label competition. Update: This beer took 2nd place in Das Best Oktoberfest in Wisconsin.Read More →

This was a split batch. We created a five gallon batch. Then we put salt and coriander on half of it to create a Gose. We took the other half and put four pounds of raspberry puree on it to create a raspberry sour (see Blowing Raspberries). This really isn’t our style. We created it for competition and to meet a new category requirement for the Master Homebrewer Program. The beer is drinkable, but it is pretty sour. I think it will get better with age. Update: This brew took third place at the 2023 Boneyard Brew-off in Illinois. It took first place at theRead More →

Since we emptied the beer cooler for Lunar Rendezbrew 29, we have a nice opportunity to knock out some lagered beers. So we jumped into this German Pilsner. We are hoping for nice clean golden German flavor. (5 gallon batch) Update: This brew took first place out of 19 entries in the Alamo City Cerveza Fest competition. It scored a 41. It also took second at O’Zapft German Festival with a score of 40. Pre-Boil Gravity: 1.035 Original Gravity: 1.045 Final Gravity: 1.010 ABV: 4.6                                         Read More →

We specifically brewed this beer as part of the Austin Zealot’s Inquisition competition. Their eleventh category is the Crusade. It specifies that the beer be 11 SRM and 11 IBU. We should be really close here on the SRM. The IBU, well… we didn’t want to go that low, as we still want to drink this beer and not have it be bland. (5 gallon batch) Update: This beer took third place in the Austin Zealot’s Inquisition competition in the Crusade category. Pre-Boil Gravity: 1.033 Original Gravity: 1.045 Final Gravity: 1.010 ABV: 4.6                         Read More →

A stout in disguise… that’s right, a white stout. We brewed up this stout to serve at Lunar Rendezbrew 29 on June 3rd in Pearland, TX. (5 gallon batch) Update: This beer won the People’s Choice Award at the 2023 Lunar Rendezbrew 29 event. Pre-Boil Gravity: 1.043 Original Gravity: 1.062 Final Gravity: 1.012 ABV: 6.6%                                                                                      Read More →

Nothing is common in California, however, this beer leans into the Northern Brewer hops for its juicy hoppy flavor. (5 gallon batch) Update – This beer took 2nd place in the 2023 Alamo City Brew Battle in San Antonio, Texas with our highest score to date of a 45 on 7/15/2023. Pre-Boil Gravity: 1.035 Original Gravity: 1.050 Final Gravity: 1.015 ABV: 4.6%                                                                                      Read More →

Drink the beer you brew or enter it into another brewing competition. These are the hard choices we are forced to make. In the case of this red IPA, the wife had the final say, and this beer remained home during our recent adventure to Boot Brew Fest in Eunice, Louisiana. She did not want to let this one go out the door, and we don’t blame her because it is pretty damn tasty. (5 gallon batch) Update: This beer placed 2nd in the Specialty IPA table of the 2023 Spirit of 76 competition in Dallas, Texas. We did it again. We brewed the “Taco Beer.” We took this 5 gallon batch to the Bluebonnet Brew-off in Fort Worth, Texas, and it caught a lot of attention. This is definitely a beer that you don’t want a lot of, but it’s unique flavor can’t be denied. (5 gallon batch) Update: This beer took third place at the 10th Annual Larry Hartzog’s Twisted Brew Festival. It took second place in the experimental category at Lunar Rendezbrew 29 with a score of 42. Pre-Boil Gravity: 1.042 Original Gravity: 1.054 Final Gravity: 1.014 ABV: 5.32%                     Read More →

…Everything is fine. Sweet meet heat in this pineapple infused dragon pepper beer. That’s right, herbs and spices. Generally speaking, a jalapeno pepper is 2500-5000 Scoville units, where as, the Thai dragon pepper is 50,000 to 100,000 Scoville units. We grew this batch of dragon peppers in our backyard. Dried them in a dehumidifier, and then ground them into a spice. Unfortunately, the heat dominates EVERYTHING we’ve put it in to date. Until now… This 5 gallon batch came out sweet, but it has a nice heat on the backend. We are planning to put it on tap at the 2023 Boot Brew Festival inRead More →
